The company, which operates three bakeries in Illinois (Buffalo Grove, Deerfield & Schaumburg), creates gluten-free items out of its Schaumburg bakery. According to their website, they prevent cross-contamination by having a designated “gluten-free area in this facility… There are no wheat, barley or rye flours stored on premises. What’s more, we purchased a brand new oven to bake only gluten-free products. Once our gluten-free products have baked and cooled, everything is packaged and sealed so there is no danger of cross-contamination from our wheat products in the store front.”
